Cauliflower Cheese Sticks

Some kids don’t like cauliflower because it just tastes bland. However, you can make incredibly tasty treats from this superfood by just adding a few simple ingredients. What is more, your kid can benefit from the nourishment that they will get from cauliflower because it contains high amounts of vitamin C and has anti-inflammatory properties that can boost immune system.

PREPARATION TIME: 10 minutes
COOKING TIME: 25 minutes
This recipe serves 5 to 7

INGREDIENTS
1 head cauliflower
2 eggs
3 cups shredded mozzarella
1/2 cup grated Parmesan cheese
1 clove minced garlic
1/2 tsp dried oregano
1 tsp parsley
salt and pepper to taste
your choice of dip

DIRECTIONS
1. Preheat oven to 220 °C
2. Grate cauliflower on a grater or food processor.
3. In a large bowl, transfer the grated cauliflower. Add eggs, garlic, oregano, mozzarella, and Parmesan cheese. Season with salt and pepper.
4. Transfer the cauliflower mixture on to a baking sheet with parchment.
5. Pat to form a crust.
6. Bake for 25 minutes or until golden brown.
7. Sprinkle with mozzarella and parsley. Bake for 5 minutes or until cheese has melted.
8. Slice and allow to cool before serving.


NOTES:
For dipping, you can use marinara or pizza sauce.
